Produced from the native Eucalyptus Maculata, in the coastal national forests of NSW, this rich flavoured honey has a hint of caramel and a smooth consistency. The trees have white blossoms that flower during winter to spring but the rarity of the honey is due to the tree flowering every 4-6 years.
